Vintage Option
Allows the winemaker to balance the alcohol / wine concentration levels from the first crush of the Vintage. When performed on early wines and used as a blending option on high Baume juices, it allows the winemaker to achieve desirable alcohol content in finished wine.

Blending Option
Allows the winemaker to fine tune the phenolic, acidic and alcohol content of finished wines.
