Alcohol Adjustment Technology
AlcoTECH alcohol adjustment technology allows you to fine tune your wine to produce the perfect blend at the required alcohol level.
AlcoTECH alcohol adjustment functions on the principle of low temperature evaporation under high vacuum, coupled with modern distillation technology at Tarac’s Nuriootpa facility in South Australia.
Vintage and blending options are available, allowing winemakers to fine tune individual components throughout any stage of the winemaking process, creating tailor made winemaking solutions.
AlcoTECH provides additional options to current technologies available.

Vintage Option
Allows the winemaker to balance the alcohol/wine concentration levels from the first crush of the Vintage. When performed on early wines and used as a blending option on high Baume juices, it allows the winemaker to achieve desirable alcohol content in finished wine.
Vintage OptionWine produced early in vintage has all EtOH removed. Wine at 10% EtOH used at crusher to lower Be.

Example
- 10T of grapes crushed and fermented to yield approximately 7.5KL of wines
- 7.5KL of wine treated to remove ethanol to yield approximately 6KL of 0% wine
- 6KL of 0% wine added to 54KL of juice at 15Be -> 13.5Be in final blend of 60KL
- 60KL blend fermented to dryness producing a wine at around 13.5% EtOH (instead of 15%)
Blending Option
Allows the winemaker to fine tune the phenolic, acidic and alcohol content of finished wines.
